This bbq sauce is a standard and can be used in so many ways
- to coat meats as they cook on the bbq
- to serve with bbq meats
- as a pizza base sauce
- as a pasta base sauce

| garlic clove | 2 | pc |
| chilli - small | 1 | pc |
| fresh ginger | 2 | cm |
| ground cumin | 1 | tsp |
| sugar - brown | 1 | tbs |
| vinegar - white or cider | 5 | tbs |
| worcester sauce | 2 | tbs |
| apple juice | 200 | ml |
| chopped tomatoes - tinned | 2 | pc |
| tomato ketchup | 200 | ml |
| mustard - mild | 1 | tbs |
- place the finely chopped onion, garlic clove, chilli and grated ginger in a saucepan with a good glug of olive oil
- cook over a gentle heat until the onion is good and soft
- add the cumin, sugar, golden syrup, vinegar, worcester sauce and apple juice, simmer until only half the amount remains
- add the chopped tomatoes, ketchup and mustard and simmer for 10 minutes
- taste and season
- continue to simmer until the sauce has nicley thickened
- remove and allow to cool
- place into jars and keep refrigerated
