RECIPE BBQ - bbq sauce

This bbq sauce is a standard and can be used in so many ways 

  • to coat meats as they cook on the bbq
  • to serve with bbq meats
  • as a pizza base sauce 
  • as a pasta base sauce

onion 1 pc
garlic clove  2 pc
chilli                     - small 1 pc 
fresh ginger 2 cm
ground cumin 1 tsp
sugar                   - brown 1 tbs
vinegar                 - white or cider 5 tbs
worcester sauce 2 tbs
apple juice 200 ml
chopped tomatoes - tinned 2 pc
tomato ketchup 200   ml
mustard                 - mild 1 tbs
  1. place the finely chopped onion, garlic clove, chilli and grated ginger in a saucepan with a good glug of olive oil
  2. cook over a gentle heat until the onion is good and soft
  3. add the cumin, sugar, golden syrup, vinegar, worcester sauce and apple juice, simmer until only half the amount remains
  4. add the chopped tomatoes, ketchup and mustard and simmer for 10 minutes
  5. taste and season
  6. continue to simmer until the sauce has nicley thickened 
  7. remove and allow to cool
  8. place into jars and keep refrigerated
