the original sandwich is said to have been created by a staff member of the Earl of Sandwich, but the Portugese take it to a whole new level with this one. A sandwich not for the faint hearted or those watching their weight. Remember, items like these are (unlike in Porto) an occasional meal, notmeant to be eaten every day
there is no set recipe of ingredients as such, only guidelines. In Porto it almost a weekly ritual meal, like fish and chips in the UK.

| lager | 100 | ml |
| madeira | 50 | ml |
| stock - chicken | 50 | ml |
| cream | 50 | ml |

- combine the lager and madeira and simmer until reduced by 3/4's
- add the stock and simmer until reduced by half
- add the tomato puree and cream and simmer gently
- add some chilli flakes to taste and continue to simmer until lightly thickeded
- taste and adjust seasoning
- construct sandwich with no cheese
- toast gently on both sides
- drape the cheese over the sandwich and toast to melt
