Many varieties of duck on the brook. What's your favourite?

My favourite recipe by the way is Peking Duck - the meat inside a small pancake with onions and Hoisin sauce, together with crispy skin.

Mmmmmm, crispy skin.

Duck is too greasy for me i much prefer moorhen i dont seem to have seen too many of them around though just latley.
