I was out with the good people of the Princess Marina yesterday, taking my grandaughter on her first ever boat fishing trip. We had a great time, great weather, great skipper and we caught lots of lovely mackerel.
Onboard was a local family who had no idea on how to fillet them. So this is dedicated to them, but I hope will enthuse others to give it a go. Mackerel I always feel is one of the easiest to fillet.

Also, does Pheasant have to be well cooked like Chicken, or can it be eaten rare/medium rare?

I wish I could, but I have to rely on the charity of others if they have one or two spare, and that is very rare.
