stuck at home in this bad weather? can't get to the bakery? need a shot of some comfort food? 

how about getting stuck into some home baked scones, just three main ingredients and you are well on your way to some light delicate scones; plain, cheese, savoury or sweet. All the recipes are here for lunch, afternoon tea or to go with your dinner.

Perfect while watching Wimbledon, with strawberries & clotted cream ..... ahhhh bliss!

Still prefer mine.

225g  self-raising flour

10ml baking powder

50g butter

25g caster sugar

1egg

3 fl oz milk.

 

Preheat oven to 220*C. Lightly grease baking tray.

Place flour, baking powder and caster sugar into a bowl

Rub in the butter until resembles fine breadcrumbs

Break the egg into a measuring jug and add milk to bring the amount up to 150ml add to the flour, reserving a small amount.

Mix to a soft dough.

Place on a floured work surface, roll to a thickness of 2cm cut into rounds with a 5cm fluted cutter. Place on a baking sheet and brush with the remaining egg and milk mix.

Bake in oven for about 10 mins until well risen and light golden brown.

Cool and split open and spread with your favourite jam and top with a generous dollop of Devonshire clotted cream.
