Gould, 28, of Parkham Road, Brixham, admitted affray and attempted wounding and was made subject to a hospital order by Judge Phillip Wassall.
The judge told him: "It was a truly murderous and sustained attack. You were intent on stabbing him. It was a frenzied attack which was only unsuccessful because of the sheer extent of the fight PC Moore put up.
The paranoid schizophrenic was sent to a secure ward at the Butler Clinic in Dawlish indefinitely yesterday after Exeter Crown Court heard he posed a high risk to the public.
