my favourite sandwich? well let's just say another of my favourites, there are so many great sandwiches it's hard to choose

the original sandwich of course is said to have been created by a staff member of the Earl of Sandwich, who was a reknown gambler and often ate at the table. So a staff member put meat between bread, to keep his fingers clean. Appropriately the, the Club Sandwich is said to have been created in a gambling house in New York at the end of the 19th century

the classical bookmaker sandwich is essentially a toasted steak sandwich, made with minute steaks (thin slices of sirloin. But as with most things, it is at its best when the best ingredients are used. I prefer slices of scotch fillet, it is more tender than sirloin or rump, but more packs a lot more flavour than fillet.

this is my own version of the classic, with added options. I love to serve this one as an open sandwich, criss crossing the toasted ciabatta, placing the (mustard smeared) steak slices on top, intertwined with bay leaf salad (beetroot leaves, dandelion, arugula etc) and a drizzle of good olive oil and a squeeze of lime juice)


bread slices - ciabatta 2 pc
scotch fillet - thin slices   3 pc
garlic clove  1/2  pc
olive oil   sq
horseradish sauce   sq
or     
mustard of choice    sq
  1. lightly rub the steak slices with olive oil and season with sea salt and freshly milled pepper (fresh thyme leaves also rubbed into it makes an awesome addition to the flavour)
  2. heat a frying pan or griddle pan over a medium high heat 
  3. carefully place the steak slices into the pan and cook for 30 seconds to 1 minute on each side
  4. remove and set aside to rest
  5. drizzle the ciabatta slices with olive oil and "toast" in the griddle pan on one side, turning part way through to obtain a criss cross pattern, repeat on the other side
  6. remove and rub with the cut side of the garlic clove 
  7. construct sandwich

chef notes

serve with a dill pickles and baked wedges or chunky chips for a superb brunch dish 

add any of the following (or combination of) for a trully great steak sandwich 

  • tomato slices or sundried tomatoes 
  • lettuce leaf selection or watercress
  • red onion slices 
  • red onion marmelade 
  • swiss cheese, feta, ricotta or haloumi 
  • aioli
