RECIPE INDIAN - riata, cucumber

a riata is usually a side dish, that is yoghurt based

generally used as a side dish that helps quell the heat from chilli, due to the dairy base. Never try to quell the heat by drinking water, beer etc. Any dairy based dish is better, such as a yogurt based riata or a lassi (a yoghurt based fruit smoothy) 


 

yoghurt - plain greek style  1 cup 
cucumber - small  1 pc
  1. peel the cucumber and cut in half lengthwise
  2. scoop out the seeds and discard
  3. cut into small pieces and place in a liquisor with the yoghurt and blend until smooth
  4. alternatively, the cucumber can be grated into the yoghurt and stirred to combine
